A built-in banquette is fixed to the wall and floor, scribed to fit, and can carry storage under the seat. A freestanding one is a finished piece of furniture that can be moved for cleaning, a redesign or a move. Restaurants usually want built-in runs for capacity and rigidity; homes often prefer freestanding because it leaves the kitchen flexible. The choice changes the construction, the install and the price, which is why it is the first question we ask, before fabric or colour.

Upholstery that survives daily service

In a dining room the seat is the part that wears. Commercial seating fabric is specified by its abrasion rating, and a busy restaurant should ask for a heavy-duty rating rather than choosing on colour alone. Seams are placed away from the front edge where they rub, and a removable seat or back panel means a damaged section can be reupholstered without taking the whole run out of service. For homes, performance fabrics give much of the same resilience in a softer hand.
